I just love Mexican recipes with ground beef. They make for easy and tasty weeknight meals my family enjoys. This Mexican corn casserole recipe is one of my favorite dinners to make of all time.

Mexican Ground Beef Casserole Ingredients
- ground beef 80/20 blend cooked and drained
- taco seasoning packet
- water
- green onions chopped
- corn kernels thawed from frozen, or freshly cooked
- salsa your choice of salsa; I use medium heat
- corn tortillas you can also use flour tortillas if preferred
- hatch chiles
- enchilada sauce
- Mexican blend cheese shredded
- chopped green onions and fresh tomatoes for garnish (optional)
How to Make Mexican Casserole with Ground Beef
- Preheat oven to 350°F. Grease a skillet with cooking oil and place over medium heat on the stove. When hot, ground beefand cook until all beef is broken up and browned.
- Combine ground beef taco seasoning, water, and choppedgreen onions. Stir in salsaand 1 cup corn kernels.
- Spray 9 by 13-inch baking dish with non-stick spray. Layer corn tortillas along the bottom.
- Top with ⅓ of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.
- Repeat the layers twice in that order, then top everything off with your remaining cheese.
- Cover with foil and bake at 350°F for 45 minutes. Then, remove foil and bake another 10 minutes.
- Allow Mexican ground beef casserole to sit loosely covered with foil for 10-15 minutes before serving.
- Top with green onions and fresh diced tomatoes. Serve and enjoy!

- ¾ cup water
- ½ cup green onions chopped
- 1 cup corn kernels thawed from frozen, or freshly cooked
- 16 oz. salsa your choice of salsa; we use medium heat
- 12 6-inch corn tortillas you can also use flour tortillas if preferred
- 20 oz. hatch chiles five 4 oz. cans of diced chiles
- 10 oz. enchilada sauce mild
- 1 lb. Mexican blend cheese shredded
- chopped green onions and fresh tomatoes for garnish
